Cooking Thursday – 2/7/2013

cookingthursdayAs I eat left-overs from last night’s SUPER EASY and SUPER YUMMY dinner, I thought I’d join Sandra for COOKING THURSDAY today and share what we ate:

This is a crock pot meal from Janelle at Comfy in the Kitchen.

4-6 chicken breast (depending on how many you need to feed)

4-6 strip thick, center-cut bacon (to correlate with the chicken^)

2 cans cream of chicken soup

1 cup sour cream

{ALTERNATE “GRAVY” for gluten-free or for those who hate to use cream of ___ soup and sour cream:  1 1/2 cups chicken broth and 1 1/2 cups heavy cream}

Fry the bacon until it is about 3/4 done … still pliable, not crisp.

Remove from pan and drain grease.

In the renderings/dripping from the bacon, add cream of chicken soup and sour cream.  Stir and warm.

Wrap each chicken breast w/ a piece of bacon.  Place in crock pot.  Cover with the “gravy” mix.  Cook on LOW for 6 hours (mine was done in about 4 1/2 or 5 hours).

Serve over mashed potates or rice.
