This recipe is credited to one of my 2 very best Missouri friends – Kim or Kim. 😉 I’m not sure whose this recipe is originally, but it reminds me of gathering with these ladies and their families … I miss them so much!
This salsa is a summer family favorite of ours!
1 can black beans, rinsed and drained well
1 can shoepeg corn, rinsed and drained well
3-4 tomatoes, diced
1 green pepper, chopped
1 medium red onion, diced
1 jalapeno, diced (optional)
1/4 cup fresh cilantro, chopped
1 tsp salt
1 tsp garlic powder
juice of 1 lime mixed with
1 tbsp oil
Mix all ingredients together. Let sit in refrigerator for 2-3 hours (if you can wait that long!!).
